                  固安美食“炒面菜”
      提起“面菜”二字,人们会感到很稀奇。固安县马庄镇蒲落垡永兴饭店自2008年开业以来,除有各种色香味美的饭菜,还为食客推出了独有的一种传统美食“炒面菜”。

面菜,与摊煎饼相似,但比煎饼略薄,吃着口感柔和、筋道。摊面菜要选用优质小麦面粉,加入适量的水,搅拌均匀后调成面糊,醒面一小时后,再加上鸡蛋、花椒面、食盐、葱末、香菜末等调拌均匀;将平底锅烧热适度,刷一层食用油,用勺子舀入适量面糊,用铲子刮抹均匀,呈薄厚匀称的圆片状,翻面数次烙熟即可,这道老少皆宜的面菜摊制而成。

其后为炒制。将刚出锅的一张张软饼趁热卷成圆柱状,用刀斜切成长条型段。重新加柴烧锅,锅底放入油加热,投入姜丝、葱花、蒜瓣等炒出香味,再将切好的面菜段入锅爆炒,随锅铲翻动不时淋入稀释过的酱油和醋,至面菜段表层呈现红黄颜色并有稍许焦脆即可,出锅前放进备好的蒜台段、几叶香菜、滴入少许香油,味道更佳,一道香气怡人的传统的美食“炒面菜”就做好了,让人们有一种忍不住想大饱口福的冲动。

据永兴饭店经理姚立勇介绍说:面菜,是一道很古老的传统美食,旧时每逢农历六月初一,民间有祭祀天帝爷的习俗。每到这一天,家家摊面菜有“收新麦、摊面菜、敬天神、接新人(接未过门的新媳妇)”的说法。祈求风调雨顺,秋粮增产丰收的愿望。
